Recipe for turkey legs, similar to the ones at the fair?

I’m pretty sure the is a brine involved and probably a simple rub. Was also wondering about the cooking process. Are they smoked for a few hours and then wrapped in foil and cooked longer? I have been trying different methods and haven’t gotten the desired results. Please help

Ingredients
4 (1/2 lb) turkey drumsticks

vegetable oil
hickory wood chunks or hickory chips, soaked in water for at least 30 minutes

Sauce
1 tart granny smith apple, peeled,cored,and thinly sliced
1 cup finely chopped white onion
1 cup apple cider
1/2 cup ketchup
1/4 cup dark brown sugar
1 tablespoon cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 cinnamon stick
Rub
1 tablespoon paprika
1 tablespoon dark brown sugar
2 teaspoons kosher salt
1 teaspoon garlic granules
1 teaspoon onion powder
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne
1/4 teaspoon ground cloves

To make the sauce: In a saucepan, stir all the sauce ingredients together using a whisk.Bring mixture to a boil; lower heat to medium-low and simmer for 20 minutes or so, until the apples are cooked and the sauce is thickened.
Throw out the cinnamon stick; let sauce cool for 5 minutes. Puree sauce in a blender or food processor. Equally divide sauce into 2 bowls; set aside.

To make rub: In a bowl or heavy duty plastic zip-top bag add all the rub ingredients; stir or shake to combine. Rinse the turkey legs under cold water and pat dry. Coat turkey legs with rub mixture; let stand for 20 minutes at room temperature before grilling.

Spray or lightly brush turkey legs with vegetable oil.
Follow your grill manufacturer’s instructions for using wood chunks.
Grill turkey legs over indirect medium heat for approximately 1 hour or until meat thermometer reads 180° when inserted into the thickest part of the meat (baste occasionally with sauce from 1 reserved bowl).
Take legs off grill and served with sauce from the 2nd reserved bowl.

Free Soul Food Recipes: Healthier Soul Food Holidays Expected

Free soul food recipe sites are gearing up for a healthier holiday compared to previous holidays when it comes to southern cooking. Collard greens is cooked in less water as in steaming, or even stir frying. Stir frying is growing popular among health enthusiasts because of the way it preserves vitamins.

Traditionally collard greens was cooked in large amounts of water. This process have been found to dilute much of the vitamins and minerals during the cooking process. Also, many current recipes eliminate pork products in their recipes for seasoning collard greens, black eyed peas and bean dishes.  Normally ham hocks  or fat back is used.   These items have been known to cause high blood pressure and other stress related ailments. Instead smoked turkey is often chosen as the healthier fat-free alternative.

Other healthier seasonings is used to give the robust flavor soul food recipes are known for. Now you’ll find less blood pressure rising table salt  and more natural seasonings. For example, herbs such as rosemary, thyme, oregano,  cayenne pepper, basil and others. You’ll also find other natural seasonings such as onion, garlic, celery, lemon and lime juice to add flavor and interest to the southern dishes.

The changes have also taken place all the way down to the type of cooking oils used now.   You’ll find many of today’s soul food recipes containing lighter cooking oils.  Heavier oils, such as lard and other animal fats have all but disappeared from most southern recipes. Now you’ll  find lighter oils such as safflower, canola, peanut and olive oil used in many recipes. Yes, many health conscious soul food recipes lovers are using these suggestions to make sure they  not only have a happy holiday season – but a healthier one too.

Can I use regular turkey necks instead of smoked necks?

Trying to make greens. Most recipes call for smoked ham hocks/necks etc, I have regular turkey neck bones and would like to use them up. Can I simply sub. the regular necks and add extra salt?
