What can I do with leftover smoked salmon?
We had a holiday party at my office. An entire finger-food platter of smoked salmon strips on hard bread was left over, so my boss said take it home. Anyone have an ideas what I can with this salmon? Bear in mind I am not a cook.
You can toss it with a salad, make salmon patties, or make a spread for the holidays. The following recipe calls for canned salmon, but I have made it using leftover baked salmon fillet:
Smoked Salmon Spread
1 can Salmon
8 ounces cream cheese, softened
1 teaspoon lemon juice
2 teaspoons grated onion
1 teaspoon horseradish
¼ teaspoon garlic salt
¼ teaspoon Liquid Smoke
3 tablespoons parsley, chopped
½ cup chopped pecans, (optional)
Drain salmon, flake and remove skin and bones.
Combine all ingredients, mix well. Chill well before serving with crackers.

I have some homemade smoked salmon that has been in a ziplock bag in the fridge for a month. Is it still good?
