Serving salmon at a christmas party, how do I prepare it?

I’m using fresh salmon because the smoked salmon is so much more expensive. I want to cook it on the grill, gas grill. What is the best way to prepare/serve it?

being that I am originally from the pacific northwest of the US, salmon is one of my favourite foods… not only to eat, but to prepare in various ways… one of my favourite ways to prepare it on a grill, is to simply either slice it into “steaks” or fillets, and lay it in some aluminium foil, cover it with slices of sweet, or red onions (sweet has a nicer flavour, but red makes a “prettier” presentation), and sliced lemon. the lemon and onion add a nice flavour to the fish, and leave it not needing any condiments. as far as smoked salmon… you can buy a regular salmon (I sometimes use leftovers from the grilled salmon I just discribed), and mix it with a “liquid smoke” that will give it the smoke flavouring, without the added cost of buying it smoked. once you have attained the desired “smoke” taste to it, “flake” the fish, and mix with cream cheese, and wrap in a plastic wrap.. refrigerate it for an hour or so, to “set up” then form it into a ball.. you can roll the ball in either dried parsley, or a favourite chopped nuts (may people use smoked almonds), and serve with a nice table cracker… I’ve yet to find the person that didn’t love this way of serving smoked salmon!

Cooking smoked salmon fillet?

I simply LOVE Smoked Alaskan Salmon. My fiance bought a fillet the other day, and wants to cook it for me on his charcoal grill (of which ALSO has a smoker on it). The only way that I have ate it is with butter and lemons on it. But I don’t know what else goes on it.

(I usually eat it at restaurants)

My question is this: Do any of you know a good and simple recipe for Smoked Salmon, (using butter and lemon) that you can cook on a grill/smoker? I would love to hear ALL your answers!

Grilled Whole Salmon Fillet

1/4 cup teriyaki sauce
1/4 cup lemon juice
3 tablespoons brown sugar — packed
1 1/2 tablespoons vegetable oil
1 clove garlic — crushed
4 pounds salmon fillet — skin on

Combine teriyaki sauce, lemon juice, brown sugar, oil and garlic and stir to mix. Place salmon, skin side down, on 2 layers of heavy-duty foil. Remove thin white pin bones. Baste salmon with soy mixture andlet stand while preparing grill (medium-low heat). Place fish on grill, with lid and vents open. Cook about 30 minutes, basting occasionally, until fish is opaque when tested at
its thickest part and reaches 135#161#F to 140#161#F on an instant-read thermometer. Transfer to platter. Serve hot or cold.

2 tb Chopped Shallots Divided
8 ea Sprigs Fresh Dill OR Basil
2 ts Lime Juice Divided
8 ea Fresh Sorrel Leaves
1/4 ts Pepper Divided

Rinse Salmon, Pat Dry. Cut 4 (18 X12 Inch) Pieces Of
Heavy Dutyaluminum Foil. Light Coat Dull Side Of Each
Foil Square With Cooking Spray. Center A Dill Sprig &
A Sorrel Leaf On Lower Half Of Foil. Top With Salmon.
Place Another Dill Sprig & Sorrel Leaf On Top Of The
Fillet. Sprinkle With 1 1/2 t. Chopped Shallots, 1/2
t. Lime Juice & A Pinch Of Pepper. Repeat Procedure
With Remaining Fillets. Fold Upper Half Of Foil Over
Fillets, Meeting Bottom Edges Of Foil. Seal Edges
Together Making A 1/2 in. Fold. Fold Again. Allow
Space For Heat Circulation & Expansion. Repeat To Seal
Each Side. Place Foil Packets On A Baking Sheet Then
Bake At 400 Degrees For 7 To 10 Min. Cut An “X” in Top
Of Each Packet & Fold Foil Back. Spoon Salmon & Herbs
Onto Warm Plates. Fat 4.4, Chol. 40.

1 c Mushroom slices
1 tb Margarine
1 c Kraft Think ‘N Spicy
Chunky Barbecue Sauce
6 oz Frozen cooked shrimp, thawed
1 tb Prepared horseradish
1 1/2 lb Salmon steaks, 1″ thick

Saute mushrooms in margarine. Reduce heat. Stir in
1/2 cup barbecue sauce, shrimp and horseradish; heat
thoroughly, stirring constantly.

OUTDOORS: Place fish on greased grill over low coals (ash
gray). Grill, uncovered, 6 to 8 minutes on each side or until fish flakes easily with fork, brushing frequently with remaining sauce. Serve with shrimp mixture.

INDOORS:
Place fish on greased rack of broiler pan. Broil 5 minutes on each side or until fish flakes easily with fork, brushing frequently with remaining barbecue sauce. Serve with shrimp mixture.
