what is the best sauce for smoked ribs?
The one I make myself.Here’s how I do it.
* 1 can tomato sauce
* 1 can tomato paste
* 2 tablespoons brown sugar
* 2 tablespoons vinegar
* 2 tablespoons olive oil
* 3 cloves garlic crushed
* 4 tablespoons minced onion
* 1 tablespoon Worcestershire sauce
* 1 teaspoon dry mustard
* 1 teaspoon cayenne
* fresh ground pepper to taste
Cook minced onion and garlic in olive oil until onions turns opaque. Add remaining ingredients, mix thoroughly and allow to simmer 20 minutes. Makes about 1 1/2 cups.

Tasty BBQ Rib Ideas
When cooked right, bbq ribs are delicious. They are moist, flavorful and tender, falling off the bone with the lightest touch. They are also quite versatile. Instead of making the same old bbq ribs that everyone else on the block is making, why not try some of these rib ideas? You may be surprised by how changing just a few ingredients can make your ribs take on a whole new flavor. You may even find a new family favorite.
Ribs can be cooked in a variety of ways. You can cook them on a grill or in a smoker, crock pot or oven. However you choose to cook your ribs, you will find them easier to cook and handle if they are left as a whole rack, rather than separated into individual ribs. This also helps keep your ribs from drying out, a common problem associated with ribs. If using a crock pot, you may not be able to fit the entire rack in one piece. In that case, try using a half rack or cutting the rack down to where each piece contains several ribs rather than only one.
Ribs typically get their flavor through sauces, glazes or rubs. Sauces can be added before putting the ribs on or used to baste throughout the cooking time. Glazes are generally applied in the last ten to fifteen minutes of cooking. This is because glazes generally have high sugar content, which can lead to burning if left on the heat too long.
Rubs are almost always added prior to putting the ribs on the grill. For a stronger flavor, apply your rub and let it sit for a while before grilling or smoking. The longer you allow the meat to sit, the more intense the flavor will be. Some of the more interesting rib ideas involve combining methods. This works especially well when you are wanting to bring more than one flavor to your food.
Some people prefer to let the meat speak for itself. In this case, you can give your ribs a hint of flavor by adding some fresh herbs and spices to the water in your smoker. As the water heats, the herbs release flavorful oils, which mix into the steam that is being used to keep your ribs moist.
Many rib ideas come from combining the flavors we love from other cuisines with them. For instance, plum sauce is a tasty condiment found in Chinese cuisine. Combine the sauce with some onions, garlic, oil, red wine, red wine vinegar, sugar, french mustard, chili sauce and tomato puree for a delicious bbq sauce. Just baste the ribs with it while they are cooking and you will have bbq ribs with a Chinese flair.
Basque flavors also pair nicely with ribs. Salt and pepper ribs and add to grill. Baste with a mixture olive oil, garlic and paprika. About fifteen minutes later, you will have delicious ribs with a hint of Spain.
Most bbq sauces tend to be sweet. If you are not afraid of spice, try one of the hotter rib ideas. Mix caster sugar, hot paprika, dry chili flakes, brown muscovado sugar, salt, pepper, cumin and cayenne pepper to make a rub. Apply rub to ribs, let sit for an hour to absorb flavors, then smoke. The typical cooking time is one hour per pound of ribs.
If you prefer to mix spicy and sweet, try one of the rib ideas that combine these. Make a rub by combining sugar, garlic salt, chili powder, salt, paprika, ground black pepper and cayenne pepper. Apply the rub and put your ribs in the smoker. In the last fifteen minutes, apply a glaze made of ketchup, English mustard, white vinegar and brown sugar that has been simmered for a while to meld the flavors. At first taste, you get the glaze with its sweet flavor. Then the heat of the rub kicks in.
In many cases, the best rib ideas are the ones you come up with on your own just experimenting. Think about what flavors your family loves and see if you can apply them to ribs. You may be surprised to learn how tasty your own rib ideas can be.

Sticky bones (beef ribs)
1 cup vinegar
1/2 cup honey
2 tablespoons Worcestershire sauce
1/2 cup catsup
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
1/4 teaspoon black pepper
1 clove garlic, minced
4 pounds beef ribs
Combine vinegar, honey, Worcestershire, catsup, salt, mustard, paprika, pepper and garlic in saucepan.
Cover. Bring to boil. Reduce heat and simmer 15 minutes.
Place ribs in a single layer in baking pan.
Cover with hot marinade and let stand 1 hour.
Drain off marinade.
Bake ribs at 325 degrees F for 1 hour turning and basting often with marinade.
