Jalapeno Based Hot Sauce
The jalapeno pepper is one of the most known and loved chilli pepper. Its medium heat and fresh tasting flavour is ideal for hot sauces beginners and at the Devil’s Garden, after a lot of experimentation and tasting sessions, we have been able to narrow down our search for the perfect jalapeno hot sauce to the following:
Starting with a giant in the hot sauce industry, we are of course talking about Hot Headz. Their Jalapeno Pepper Hot Sauce is truly mouth-watering from the moment you open up the bottle. The distinctive naturally green colour is striking and somewhat alluring. We constantly use this hot sauce in dishes such as Chinese noodles or as a marinade for chicken, especially if then used for kebabs.
Blair’s Jalapeno Hot Sauce with blue aguave tequila is one that we were extremely interested in and we certainly haven’t been disappointed! The hint of alcohol (not enough to get you drunk I’m afraid!) as well as the tangy lime makes it highly enjoyable and we have dared using it to spice up one of two Bloody Mary!
Dave’s Hurtin’ Jalapeno hot sauce is something else altogether. The earthy taste of the Jalapeno combined with garlic, coriander and the fresh flavour coming through from the Chayote, a kind of Mexican summer squash, transform what could be a normal hot sauce into something truly awesome. The heat is quite pungent so we wouldn’t recommend it for beginners. After all, one thing that Dave’s is good at is producing hot sauces that are truly hot hot hot!!
Another hot sauce well worth mentioning is Chilli Pepper Pete’s Dragon Hunter although not technically a jalapeno hot sauce as it is made with chipotle, which is a smoked version of a jalapeno. It is amazing that such a difference in taste should be found between the two. We had used fresh chipotles in our cooking before but were thrilled to discover a hot sauce so versatile and genuinely chipotle-y. We use it frequently for barbecues but mainly use it in tomato based sauces, especially served with pasta or lamb. Chipotles just add a whole new dimension to any dish and we thought we would mention just in passing that another of our product, Mr Vikki’s Tamarind Chipotle, is a great chutney to use on a daily basis, especially with cold meats. The heat of Chilli Pepper Pete’s Dragon Hunter is rather medium but a few drops go a long way in terms of flavour so the ratio money versus size of the bottle is pretty good.
We just could not leave without mentioning Hot Headz’ Bramley Apple and Jalapeno salsa. Although not a hot sauce per se, we wanted you to know about it as it is a match made in heaven with pork dishes, from chops to burgers and sausages. Definitely on the hot side but absolutely delicious, this salsa is a must have this summer!

You make adobo — its like a mexican marinade/bbq sauce –
20 chipotles seeded and veined
3 ancho chiles seeded and veined
4 garlic cloves
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 teaspoon ground cumin
2 bay leaves
1/2 cup cider vinegar
1/2 cup white vinegar
1/4 cup tightly packed dark brown sugar
1 tablespoon salt
throw all that in a blender — you have adobo. if you use it as a marinade you can add a cup of liquid — i like to use orange/pineapple juice — just don’t use stuff thats reconsitituted or it doesn’t cook well.
