Our food doesn’t come out right in the propane smoker?
My neighbor bought a smoker, but can not get the food to come out right. It is propane, about 4 shelves with a drip pan and wood chip pan. He keeps the temp around 190-200* and cooks it for around 8 hrs. He has tried brisket, chicken, and ribs and all of it has come out so tough that we had to throw it away! All of the food is pink inside and im afraid to eat it. The beef I don’t mind, but the chicken was pink and spongy inside and he said it comes out that way. What is he doing wrong and what is the proper way to smoke foods so we can eat them? Should the food be pink inside and the chicken slimy?
None of the food should be slimy. Smoking usually dries food out. The pink color in fowl is normal. The first time I smoked a turkey, I also had doubts about eating it. The use of a meat thermometer is critical for any cooking of fowl. The internal temperature should be at least 170 and left to set, where it will continue to rise. I maintain 225 to 250 temps while smoking food.

Using a Wood Fired Pizza Oven
Today entertaining on the patio or deck many times centers around an outdoor cooking area that can be as sophisticated as an indoor kitchen with all the amenities. Now there is a trend in outdoor cooking in America to include in the repertoire an Italian wood fired pizza oven.
The charm of the fire, burning our choice of indigenous hardwood, somehow makes us feel more in touch, relaxed, and poses an opportunity to experience something truly different than we’re used to. The pure art of it in the typical outdoor pizza ovens available on the market today is attractive to many who tie cooking and eating together with their fun…their enjoyment of friends and family and entertaining.
Plainly said, wood fired outdoor oven cooking takes our barbequing to the next level. The application for pizza and bread is always there, but I have had some of the best meat cooked by experienced chefs in a wood fired outdoor oven.
Therein lies a bit of a problem. The typical wood fired pizza oven is made of some sort of ceramic such as clay or brick which reaches by design temperatures that are astronomical turning out the 90 second pizza with all the blistering and panache that those who use such ovens love. Wonderful, beautiful, even exotic, but in reality the application for the outdoor cooking enthusiast is very limited.
It could be suggested that a different type of outdoor wood fired pizza oven that would have a broader application may be the answer for those who are on a more limited budget, but also have an appreciation for the amenities of wood fired oven cooking.
So, take a look at the steel wood fired oven, like other outdoor pizza ovens it does pizza, bread, and the roasting of all kinds of meats, but it also doubles as a smoker and slow cooker and can therefore be the all-round barbeque choice. The fire is fully controllable and indirectly applied to the oven yet with the smoke available to flavor just as in the clay or brick models. The steel wood fired oven is a good compromise for the aspiring cooking artist who is troubled by the purchase price; these steel models are comparatively inexpensive.
As an experienced cook from the “Old School” so to speak, I love the new concept of the “out door” kitchen, or I should say new to me. I now live where an outdoor kitchen is a normal part of living, the weather being agreeable makes an outdoor kitchen a must.. The Wood fired Pizza oven has been a “heaven sent” tool. Now my dinner parties are at the top of the list for all our friends. The versatility of this oven is what makes it such a grand choice. The ability to control the temperature is a feature that puts this oven far above the normal Barbeque units. For instance in cooking a whole “Brisket” the time is cut in half from barbequing , but the quality of the finished piece of meat is “outstanding” The oven holds the moisture and smoke flavors in till serving.

What did i do wrong with my smoked brisket?
I tried smoking brisket on my grill today I cooked it using my propane grill. I started using hickory wood chips on the burners in small tin foil pans and had the brisket in a tin foil pan on top of the grate. I used the rule of for every pound of meat you cook it for 1 to 1 and 1/2 hours. the brisket was 4.5 pounds and i cooked it for about 7 hours. the grill was set at around 250 to 275 the entire time. for the first 4 hours the chips werent smoking because the pans were doubled up, when i took one of the pans from the chips it started smoking and smelled amazing. when i took the brisket off it was about 175 degrees. and was still very tough. My family and I ate it anyway. but it wasnt the best meal in the world. what should i have done differently to make the brisket more tender. did i cook it for too long or too short? too hot or too cold.
there is a difference between a grill and a smoker. Brisket is a touch cut of meat, one that needs ( IMO ) a marinade, then slow roasting, smoking OR braising
