For something that’s as tough as beef brisket, go with a rub, rather than a marinade. Here’s my own recipe—it’s pretty all-purpose:

John’s Barbecue Rub
(note: all ingredients are of the “dried” variety)
2 TBS rosemary leaves
1.5 TBS Kosher salt
1 TBS paprika
2 tsp thyme leaves
2 tsp dark brown sugar
1 tsp ground black pepper*
1 tsp ground white pepper*
3/4 tsp celery seed
(* the amount of black/white pepper can be adjusted upward, to suit your taste)
Using a mortar & pestle (an electric spice mill will work, too), grind the rosemary leaves and the thyme together with the salt (the salt will aid in the grinding of the herbs). When the mixture resembles fine sand, add the remaining ingredients and continue to grind, to incorporate. There will be a few larger bits of rosemary leaves…this is a good thing!
This recipe produces enough rub to cover 3-6 pounds of meat (depending on how heavy-handed you are). Any leftover amount can be stored indefinitely (covered container) in the fridge.

Babrecue Brisket

A perfectly cooked brisket starts with the perfect cut. When purchasing get first grade untrimmed brisket, pork or beef whichever you prefer. Don’t trim off any excess fat as this adds flavour while the brisket is being cooked.

Brisket is one of the easiest and at the same time one of the hardest dishes to prepare on the barbecue.

One of the easiest because brisket doesn’t need much in the way of flavouring and seasoning. The hardest because it requires time and patience.

Brisket is natural a tough piece off meat so to get it tender can be quite a challenge.

Preparing and Grilling Brisket

Start by rinsing the brisket under a cold running tap and dry with a paper towel. You may add a few dry rub ingredients if you want to but it isn’t required.

Pork or beef brisket has a delicious natural flavour to it so spices are optional. Pre-heat the grill to a low to medium heat and use an in-direct grilling techniques (Heat is not directly under the meat). Place your brisket in an aluminum foil tray.

Grilling Brisket

The trick with grilling brisket is to slow cook it so it turns out nice and tender. The grilling time can be up to 6 hours. Place the brisket with the foil tray on the grill grid away from the direct heat.

When using a charcoal grill you will need to keep adding charcoal every two hours to keep the heat constant. Add damp wood chips to create smoke while you are grilling. Close the lid and wait patiently.

Every hour or so open the lid and coat the brisket with the excess oil and fat that accumulates in the tray. After 6 hours it should be done, slice a piece down to the middle and make sure it is cooked through.

Once done leave brisket to rest for fifteen minutes to let the juices settle.

When serving slice up the brisket into thin slices and pour over the left over juice from the tray. You don’t need any other sauces or marinades.

Once you have tried brisket once on the grill you will be having it more and more.

I want to know everything about smoking a brisket, Texas style. I have a bbq smoker, big 1/4 in. steel pit, with a temperature gage.

I want to know the following. Please help.

1. The type of wood to use?
Normally and for years I used Oak but since I have moved to Kansas it is hard to find so now I am trying Mesquite. Tonight is the first brisket in over a year to smoke and away from Houston. As I get ready for my all nighter I have decided to try not to smoke it too heavily as it smells pretty strong.

2. Use foil or no foil?
This goes by my mood and fat content. If it is fatty no foil if it is too trim (you cannot always find the best cuts) then I use foil but only as a “bowl” the first 1/3 of cooking. I never do a full wrap.

3. What temperature do I bbq (smoke) at?
I do not know where you do it but me… A strict 220 degrees F.

4. How long should I smoke the brisket before it is tender and juicy?
About and hour and a half per pound. But I do not feel feeding it smoke is needed after 7 hours, just maintain temp.

5. What size brisket? I’m feeding 5-8 people.
It will shrink a lot and I love to have leftovers and plenty of meat for people to go back and graze on so I would say uncooked weight 2 pounds per person. 5-8 people (adults) 12 – 16 lb brisket. I am known for cooking too much, but I love feeding people. 7 to 10 lbs would probably work.

6. What is the best marinade? (I personally use a dry rub, but do you have any better reccommendations?

None. I do not like it. I simply mix brown sugar with a good bit of cyenne for bite and some paprika and garlic powder. I do not have measurements, I just eyeball it and let my nose lead me. Give it a good massage with it and wrap in foil; and put in the fridge at least 4 hours in a pan as it will liquefy. See no reason for putting it in wet stuff, it will be wet when done.

To add my other info. I like to use the “rub juice” left from letting the rub set up to put yellow onions in and smoke for the last couple hours. Then I pour it all on the brisket before serving, my husband loves it and I really love the candied onion taste with it. I also give it a quick fresh rub of the brown sugar mix before it hits the smoker. And kick anyone who thinks to defile it with “bbq sauce” .
