Cold Smoke Salmon and/or Lox Lovers…?

I’ve been working with cold smoke for a couple of years and I’m looking for someone who knows how it’s done in New York City. I’m really interested in finding out how you like it sliced. I slice the salmon filet at an angle getting a nice broad slice but my boyfriend slices straight down getting a thinner slice. All are thinly hand sliced. Also can you taste the difference between hand sliced and machine sliced. What do you think of the dark red meat? I’m trying to figure out if I should cut it out, but can’t find any instructional websites on how to cut it out before slicing. Would love any instruction you can offer. I’ve checked out the Zabar’s website in NYC but can’t see a picture of sliced lox to see how they do it. Please help. Thanks so much and have a great day.

The angled, big slices are the best .. you can do so much more with it in terms of presentation, and I just think it feels better, softer, more tender (may be imagination)

what can I do with some hot smoked salmon for use on a buffet?

I’ve home smoked some salmon that I was going to serve on a buffet on little gems with a horseradish & creme fraiche dip.

The salmon has flaked coming out of the smoker so any suggestions on how I can serve this now? Its for a cold finger fork buffet.

You could mix it with cream cheese and chives and blend to make a Smoked Salmon Pate to eat on some sort of bread.

You could mix it with egg mayonnaise and and put it on sandwiches.

You could make a salmon+prawn cocktail

Or just simply with cream cheese and pitta breads.
